Chanie’s Italian Style – Roasted Eggplant – Tomato Sauce

All vegetables to be diced very small and sautéed individually in olive oil

3 Zucchini

3 Eggplant

2 large Spanish onions sautéed with 8 ounces fresh mushrooms

1 large garlic clove sautéed with 3 large cans of diced tomatoes –

spices to be added to tomato mixture

black pepper

cayenne pepper

Hungarian spicey paprika

Salt

Sugar

Transfer tomato mixture to 6 quart pot.  Add sautéed zucchini, eggplant, onions, mushrooms.  Cook approximately 15 minutes until flavors blend well.

Serve hot over angel hair pasta.
