Avocado hearts of palm salad
5-6 ripe avocados, peeled, pitted and diced
1 (17-ounce) can hearts of palm, drained and sliced
½ cup red onion, chopped
2 cups grape or cherry tomatoes, halved
1 heaping tbsp mayonnaise
salt
freshly ground black pepper
juice from ½ lemon
In a large bowl. Combine the avocado, hearts of palm, onion and tomatoes. Toss with mayonnaise. Season with salt, pepper and lemon juice.
Comments: Creamy and heavenly!
Addition: If using this for a lunch, put it on middle of a platter and around it put quartered toasted pita triangles. (Buy large pitas. Cut in half around with so you have two large circles. Cut each half into 4. Spray with cooking spray, garlic powder and onion powder…bake till crusty…then place around avocado lump and enjoy together-also looks pretty with white around and green avocado in middleJ)
