Baby Greens and Beet Salad



3 red beets (wrap & broil unpeeled in the oven at 400˚ until soft on the inside – appr 2+ hours)

2 ripe firm avocados

¾ cup toasted almonds

1 red onion

1 mixed baby greens


¼ cup balsamic or red wine vinegar

1 TBSP Dijon mustard

¼ cup oil

5 TBSP honey (I added a bit extra honey)

2 tsp garlic powder

2 tsp onion powder

1 tsp salt (I omitted the salt)

½ tsp black pepper

(You can substitute the last 4 ingredients with 1 pkg Good Seasons Italian Spice Mix)
